Dockside Rum Punch

Dockside Rum Punch

Dockside Rum Punch

Some drinks belong at a table. This one belongs on a dock.

The Dockside Rum Punch is bright, tropical and just strong enough to remind you there's nowhere else you need to be. Pineapple, orange, lime and two kinds of rum come together for an easy Gulf Coast cocktail made for boats, beaches, seafood boils and sunsets.

Makes 1 Cocktail

Ingredients

  • 1½ oz dark or aged rum

  • 1 oz coconut rum

  • 2 oz pineapple juice

  • 2 oz orange juice

  • ½ oz fresh lime juice

  • ½ oz grenadine

  • 2 dashes aromatic bitters

  • Ice

  • Orange wheel

  • Pineapple wedge

  • Maraschino cherry

Build the Punch

Fill a cocktail shaker with ice.

Add the dark rum, coconut rum, pineapple juice, orange juice, fresh lime juice and bitters.

Shake well until ice cold.

Fill a rocks glass or tall cocktail glass with fresh ice.

Strain the punch over the ice.

Slowly drizzle the grenadine over the drink. Give it a light stir for that classic Gulf sunset color.

Garnish It Dockside Style

Don't be shy with the garnish.

Add:

Orange wheel

Fresh pineapple wedge

Maraschino cherry

Serve immediately.

Gulf Tip

Fresh citrus makes a huge difference.

Skip the bottled lime juice and squeeze a fresh lime. The acidity keeps all that pineapple, orange and coconut from making the drink overly sweet.

Want it a little stronger and less sweet?

Replace the coconut rum with a good aged rum.

Want more island flavor?

Keep the coconut rum and add a splash of passion fruit juice.

Make a Dockside Pitcher

Makes approximately 8 cocktails

  • 12 oz dark or aged rum

  • 8 oz coconut rum

  • 16 oz pineapple juice

  • 16 oz orange juice

  • 4 oz fresh lime juice

  • 4 oz grenadine

  • 12–16 dashes aromatic bitters

Combine everything except the grenadine in a large pitcher and refrigerate until cold.

When it's time to serve, pour over ice and finish each glass with a splash of grenadine and fresh fruit.

The Gulf Collective Rule

The best rum punch isn't complicated.

Make it cold.

Use good rum.

Use fresh citrus.

Find some water.

And don't be in a hurry to leave.
